Linda of NJ writes: My fantasy is to have a raw restaurant where the chefs are near the window so that the passersby can see how they work with food. If not near the window, then the chefs would be placed at a windowed venue like that of sushi chefs. Also, a raw take-out could be just that: like a deli where the men and women are working with the noisy machines behind a partially windowed counter.
Dear Editor, I humbly offer my Raw Restaurant Fantasy: Once at the Tree of Life Rejeuvenation Center, I had some raw chocolate cappucino and biscotti. Now, I don't remember how exactly the coffee flavor was created, but Ive heard rumor of the existence of a raw coffee. A wise and creative entrepreneur might consider investing in a raw cafe! It could be called "The Raw Grind" or something like that. Serving raw coffee, nut mylks (including chocolate and other flavors), coconut water (perhaps flavored up), plus some of the usuals (wheatgrass juice, fruit/veggie juice, etc). Also serve a wide selection of raw desserts, especially dehydrated and richer types for the cooked-foodists and of course some simpler fruit desserts. Then, complement with a few simple, easy raw entrees like salad, quiche, pizza, and the like. Other details would include having only raw sweeteners: stevia, agave nectar, perhaps water from soaking dried fruits, and possibly raw sugar cane. But the most important thing is creating the bohemian coffee house atmosphere! Live music every night from a wide variety of genres. Bookshelves full of eccentric, informative, intellectual, poetic, political, nutritional, etc. books. Perhaps have a section where people sit on the floor at tables, and others with chairs. Carefully chosen mood lighting and decor. Artwork, lots of artwork. Poetry night. Open-mic night. No smoking! Yes, this would surely be my raw fantasy restaurant. Jason New Orleans, LA
Pierre Groulx writes: Part restaurant, part grocery store, part raw-food bookstore (about raw-food diet and raw-food recipes and etc.). And you get to have the info. & "quick tips" on how to prepare rawfood recipes that comes from the restaurant, and even about raw-recipes in general. Plus, you get to see the chefs prepare the foods; or even see them prepare everything right in front of you (like what they do in Japanese restaurants).
Another reader writes: Here's my Raw Food Restaurant Fantasy: The restaurant's name would be "The Raw Experience." The restaurant's interior would be exactly like the interior of the old "Raw Experience." The restaurant would be located in the same location as "The Raw Experience" was in Pa'Ia Maui. The restaurant would serve exactly the same food as did "The Raw Experience." The restaurant would teach raw food "uncooking" just like at "The Raw Experience." Dear Editor, My fantasy is an "outdoor" Garden of Eden-like setting, complete with fruit trees, nut trees, and streams. No tables- just large, low rocks, logs, etc. to sit on. No menus- just tell the waiter what you'd like and you'll get it! This could be done indoors, with proper lighting and sound effects (birds, water noises) and with gentle breezes made by fans (out of sight, of course.) Linda from the Poconos
Raw Foods News Magazine would like to see a restaurant that is large and beautiful, with a casual elegance. It would have artistic tableware, artistic presentations of food. High ceilings. Its recipes would taste and look fabulous, so that even carnivores would want to go there. The menu would contain (among other things) a variety of beautifully presented desserts. It would be a place people could go on high school dates, wedding anniversaries and such. It would have lots of raw chocolate treats, both on the menu and available for take-out: candies, tarts, puddings, pies, cakes, cupcakes, brownies. The cafe might look like the shop in the movie The Umbrellas of Cherbourg.
